Loaded nachos with fiery chilli con carne and guacamole


Ingredients for chilli
  • 1 teaspoon oil
  • 2 large onions
  • 2 garlic cloves
  • 1 tbsp chilli powder, heap it!
  • 400g can of chopped tomatoes
  • 400g can kidney beans
  • 400-600g minced beef/pork/a mixture
  • 1 teaspoon paprika, cumin, sugar
  • 1/2 tsp salt
  • 2 tbsp tomato puree if you have it
  • 1 beef stock cube
  • The rest of the salad tomatoes if you bought a 6 pack, I like to just throw in loads more tomatoes

Instructions

1. Chop the onions, they don't need to be all that small, 1cm^3 or larger is fine, heat up the hob, add oil to your pan (I use quite a deep pan) and once hot throw in the mince and brown it on high. Add the onions and garlic in as well to save time.

2. Once there is no more pink visible, add 200ml hot water and the beef stock cube, break up the stock cube and mix it in. Add the chopped tomatoes, sugar and some salt. Mix, then add tomato puree if you're using it.

3. Turn the heat down and simmer your rather soupy mixture, put a lid on it and let it bubble gently for 15 minutes (make your guacamole in this time?)

4. If you're bored of waiting, drain kidney beans and stir them into the pot, apparently you aren't supposed to bring them to the boil but I don't pay too much attention to this. Add any ingredients you still have left (paprika etc.) and don't forget the chilli powder.

5. If you have the patience, let it simmer for a while longer, and before eating let it stand for 5-10 minutes to let the flavours sink in. Then see section 5 below.

Alternatively

1. Brown beef, add onions, garlic.

2. Once brown add chopped tomatoes and the dry packet version of this.

3. Add chilli powder very generously - the packets aren't really spicy, simmer for 20 mins with a lid on.

4. Put some chopped jalapenos in for funsies, add paprika if you'd like.

5. Pour a bunch of tortilla chips onto a plate, ladle your chilli on top, heap guacamole at the side and a big blob of sour cream, proceed to devour. I use a fork then put a blob of chilli, guac and sour cream on each tortilla then use the fork to deliver the eager chip to my mouth. I buy sour cream from the supermarket because lazy, and in all honesty my actual process is just put chips and chilli on plate, take whole guacamole bowl and sour cream tub to table.
